To celebrate this year’s Best Foods National BBQ Day that kicks off Sunday 4th of March, we’ve created a variety of fresh and delicious BBQ recipes to give you inspo for the summer. So far we’ve created a Grilled Peach and Chilli Cauliflower Rice Salad, Honey Soy Veggie Kebabs with Herb Dipping Sauce, Smoked Fish Starter and for the final recipe we have this Grilled Zucchini Bites With Creamy Basil and Mint Sauce.
Zucchinis are in season at the moment, so it’s perfect timing to create this fast, healthy and flavoursome BBQ starter! They’re fresh and light with a tiny hint of smoky chargrilled flavour, plus a little richness from the basil and mint sauce. The good thing about this recipe is that it’s a simple three-step process, you can quickly grill the zucchini strips on the BBQ or pan while you’re waiting for the mains to cook, prep your sauce, then roll them up. Summer food made easy!
Hot tip: It’s best to use a mandolin to slice thin pieces of zucchini to get consistent sizes, however, if you don’t have one, get your sharpest knife and carefully cut thin slices. If your slices do turn out a little thicker or thinner, don’t worry, it’s an easy fix. You’ll just need to adjust the cook time, about a minute less for thinner slices, and a minute or so more for thicker slices. The cooking is really meant to soften the zucchini to make it pliable and easy to roll.
