Sweet treats and Easter go hand in hand and we always like to explore new fun foodie ways to put a healthier spin on this special occasion – because the last thing our crazy kiddies need is more sugar to add to their hypo ways.
To mix things up this year we’ve come up with this yummy “Easter Fruit Pizza” combo. The base is gluten-free and refined sugar-free – with a light and spongy feel (so it’s between a pancake and biscuit texture).
We layer it with a yummy lemon whip made with Tatua Mascarpone that is really versatile because it has a neutral flavour, perfect for both sweet and savoury dishes. To finish them off we’ve topped them with a variety of fresh fruits and whole food treats to make them look all pretty and tasty.
This is an easy and exciting easter treat that the whole family will enjoy.
Tip: You want to use a variety of fresh fruit in a variety of colours. Cut your fruit into different sizes and shapes to create some really cool patterns.
